A galette is one of the simplest and most successful summer pies. It does not require a special mold, complicated decoration, or special culinary skills. Just prepare a shortcrust pastry, lay out your favorite seasonal fruits, and carefully fold the edges. For the filling, not only apricots but also strawberries, peaches, plums, cherries, nectarines, or their combination can be used. ## Ingredients ### For the dough: * 200 g flour; * 100 g cold butter (or margarine); * a pinch of salt; * 1 tbsp sugar; * 3–4 tbsp cold water. ### For the filling: * 300 g apricots (or other seasonal fruits); * 2 tbsp sugar; * 1.5 tsp potato starch. ## How to prepare ### Step 1. Make the dough Sift the flour into a deep bowl, add salt and sugar. Cut the cold butter into small cubes and rub it with the flour until it resembles fine crumbs. Gradually pour in the cold water in small portions until the dough forms a tight ball. Wrap it in plastic wrap or a bag and place it in the refrigerator for **30–40 minutes**. ### Step 2. Prepare the filling While the dough is cooling, wash the fruits, remove the pits, and cut them into small pieces. You can use almost any seasonal berries and fruits — strawberries, raspberries, cherries, peaches, nectarines, plums, apricots, or their combinations. ### Step 3. Form the galette Roll out the chilled dough on a floured surface into a circle about **3 mm** thick. Carefully transfer the dough onto a baking sheet lined with parchment paper. Evenly distribute the potato starch in the center of the dough — it will absorb excess fruit juice during baking. Top with the filling, leaving the edges free with a width of about **3–4 centimeters**. Sprinkle the fruits with sugar. Lift the free edges of the dough and fold them inward, forming a characteristic open rim. For a beautiful golden crust, brush the edges with beaten egg yolk. ### Step 4. Bake Preheat the oven to **180 °C**. Bake the galette for about **40 minutes**, until the dough is golden and crispy. ## How to serve Let the finished galette cool slightly. Before serving, optionally dust with powdered sugar. The dessert is equally good warm or completely cooled. If desired, it can be complemented with a scoop of vanilla ice cream, whipped cream, or a spoonful of thick natural yogurt. ### **Helpful tips** * Use well-chilled butter — this will make the dough especially crumbly. * If the fruits are very juicy, you can slightly increase the amount of starch. * Instead of regular sugar, cane sugar can be used — it will give the filling light caramel notes. * Experiment with the filling: apricots pair well with raspberries, peaches with blueberries, plums with nectarines, or apples with cinnamon.
