## 1. Insufficient Cleanliness of Jars and Lids The cleanliness of containers is one of the most important conditions for the safe storage of homemade preserves. Simply rinsing jars with hot water is not enough: microorganisms that can lead to product spoilage may remain on their surfaces. Jars must be thoroughly washed, and further processing should be done according to a chosen and tested canning recipe. Special attention should be paid to the lids: they must be clean, undamaged, and suitable for the specific sealing method. It is also important to remember that sterilizing an empty jar does not guarantee the safety of the finished preserve. The acidity of the product, temperature and duration of heat treatment, recipe, and storage conditions also matter. ## 2. Using Damaged Vegetables and Fruits The desire to make use of damaged produce can end in spoiled preserves. Vegetables and fruits showing signs of rot or mold are better not used for canning. Simply cutting away the visible spoiled part may not be enough. Mold and damage can spread further than is visible to the naked eye. For homemade preserves, it is better to choose fresh, whole, and firm fruits without signs of mold, rot, or serious damage. They should be carefully sorted and washed before preparation. ## 3. Incorrect Choice of Salt Salt does indeed affect the taste, texture, and quality of some homemade preserves, especially pickles and fermented vegetables. However, the common assertion that iodized salt always makes vegetables soft, slippery, and bitter is too categorical. For salting and fermentation, it is more convenient to use salt without additives, as anti-caking agents in some types of salt can affect the clarity of the brine. If a specific type of salt is indicated in a tested recipe, it is better to stick to that. It is especially important not to replace one type of salt with another “by eye”: salt of different grinds occupies different volumes, so when measuring with spoons, the actual amount of salt can vary significantly. It is more reliable to refer to the weight specified in the recipe. ## 4. Breaching Airtightness Lids and jars must be in good condition. A damaged edge of the jar, a deformed lid, or improper sealing can lead to a breach of airtightness and spoilage of the product. However, checking just-processed jars by turning them upside down is not recommended for all modern methods of home canning. It is safer to follow the instructions for the specific type of jars and lids and the tested recipe. After cooling, it is necessary to check whether a reliable vacuum has formed and whether the jar is properly sealed. If the lid is bulging, there is a leak, the contents are foaming, have an unusual smell, or other signs of spoilage, such a preserve should not be tasted. ## 5. Violating Recipe and Proportions This is one of the most serious mistakes. In home canning, one cannot arbitrarily reduce the amount of vinegar or another acidifier specified in the recipe, change the ratio of ingredients and liquid, or shorten the necessary heat treatment time. Acidity is especially important. The botulinum pathogen *Clostridium botulinum* can pose a danger in improperly prepared low-acid preserves. Moreover, the dangerous product does not necessarily have to have an unpleasant smell, strange taste, cloudy brine, or a bulging lid. Therefore, for long-term storage at room temperature, it is advisable to use tested home canning recipes and strictly adhere to the proportions, processing method, temperature, and time indicated in them. Home canning is not the case where one should experiment with the technology “by eye.” Clean and quality products, proper containers, and, most importantly, strict adherence to a tested recipe help not only preserve the taste of the preserves but also reduce the risk of food poisoning.
