Pumpkin is suitable not only for soups and porridge but also as a main ingredient in desserts. We offer several sweet dishes that will be not only delicious but also healthy due to the properties of this berry. Cottage Cheese Casserole with Pumpkin Ingredients: Cottage cheese (moist, not dry) — 800 g; Peeled pumpkin — 170 g; Water — 60 ml; Eggs — 3 pcs; Sugar — 3.5 tbsp; Vanilla sugar — 1 tsp; Flour — 2 tbsp; Salt to taste; Vegetable oil — 0.5 tsp. Method of Preparation: Wash the juicy pumpkin, peel it, and grate it on a coarse grater. Transfer to a saucepan, add water, and simmer for 15 minutes over low heat, stirring occasionally. Blend the cooked pumpkin until smooth and set aside. Mix the cottage cheese with the eggs, sugar, and vanilla sugar, then beat with a mixer until homogeneous. Divide the mixture into two parts. In one part, add the pumpkin puree and mix. Due to the puree, the mixture will become more liquid, so add a couple of tablespoons of flour to adjust the consistency. Transfer the cottage cheese into two pastry bags. Grease the baking dish with oil. Cut the tips off the bags and carefully pour the mixture into the dish in rings, alternating colors. Bake at 150 degrees until the cottage cheese stabilizes and the top is lightly browned, for about an hour. Pumpkin with Apples Ingredients: Apples — 400 g; Pumpkin — 400 g; Sugar to taste; Ice cream — 400 g. Method of Preparation: Cut the apples and pumpkin into pieces, sprinkle with sugar, and place in the oven for five minutes. Then stir. Place the ice cream in a dessert bowl, and top with the cooled pumpkin-apple mixture. Optionally, drizzle with honey or jam. Chocolate-Pumpkin Dessert Ingredients: Milk chocolate — 50 g; Chicken eggs — 2 pcs; Pumpkin — 150 g; Honey — 2 tbsp; Cinnamon and ginger powder — to taste. Method of Preparation: Peel the pumpkin, cut it into cubes, and cook it in the microwave or bake it in the oven. Cool and blend until smooth. Beat the eggs, melt the chocolate in a water bath. Add honey, pumpkin puree, and melted chocolate to the eggs, and mix well. You can add cinnamon and ginger. Pour the resulting batter into molds and bake in a preheated oven at 180 degrees for 30 minutes. The dessert will rise during baking and then settle slightly. Remove the molds from the oven and let them cool. Optionally, the finished muffins can be drizzled with chocolate glaze.
